Hello I have a modest amount of savings of up to 60K. I happen to be a PR since June 2019 and I m coming back to Canada for pursuing my citizenship as well as sponsoring my wife and son.
My goal is to submit the sponsorship application ASAP so probably I won’t have any job let alone be able to submit required docs like NOAs and tax returns .
so will 60k be enough for my sponsorship eligibility

As long as you find employment and start during the sponsorship process you should be fine. You will need to update your file via webform once you’ve started working.

You can do Uber Eats or Instacart part time :p As long as you have a pay stub you are good. Savings alone might be an issue some stuck up Visa Officer because 60K doesn't go very far nowadays (its a 3 yr undertaking), you need to supplement your finances and it also shows you are employable. You can join a security guard company who would give you a LOE (letter of employment). This is enough for spousal sponsorship, I mean if you don't have time to get the NOA.
P.S. you don't need to keep working the shitty job after you approved as a Sponsor, they don't check up on you after SA.
