I have MA Economics degree from India. However, it is considered as bachelors degreee, as per WES creditation rules.

If I apply for any other related Masters program other than Economics, say: Master of Management in Finance or Masters in Public Policy and Global Affairs, would it be difficult to get student Visa for on-campus programs?

No one can tell you your chances of getting a study permit. It is based on your profile and showing why you need another masters and how spending tens of thousands of dollars will give you a better job (higher paying( in India). So based on education and career progression, funds, travel history, ties to home country etc.
