I have a PR application in process and a visit visa in process. I recently extended my UK visa (due to Covid extension of studies).

Do I need to send them my new UK immigration documents and any university registration documents? If so, how?

I just want to make sure they don't get confused by seeing expired documents when in reality they have been extended.
 
I would submit what you have, explaining why you have extended. That way, it demonstrates you are responsible and stay in status legally, wherever you are. It helps to build a picture of character. Your mileage may vary, of course!i

I will need to look in that GCKey account to see where I can pass that information to them and exactly how.

Keep in mind that when you are finished uploading anything, the next button goes 'finished', so there's no review function to make sure you have no mistakes in what you submitted!

Thanks. I used the link they sent us in the SA letter. Sent them all updates. Hopefully this should help with the processing.

I think it leads to the same pages where you customize it by telling them what visa office your application is being processed at. This is what it says in the letter:
Should you need to submit additional information or make any further enquiries regarding the
Application for Permanent Residence for your relative, you must email the visa office listed above
directly using the “IRCC Web Form”. This form is found in the “Enquiries” section of the specific visa
office’s link located on this page: http://www.cic.gc.ca/english/information/offices/apply-where.asp
