You are WAY OVERTHINKING this. Also, LOE is not meant for stories. It is meant to state the facts. In this case no LOE is needed per see. You can simply say you saw the GCMS notes and noted that your salary information is missing and hence you are updating pay stubs. Just two lines is more than enough.

Thank you for your reply. I am glad to know that my application can still pass the eligibility review.
Adding the number of hours worked per week or the salary wouldn't be possible in my case as the company follows a strict format for the experience letter.
I have the last 7 months' pay stubs, bank statements showing the salary deposited from the company for all 7 years of work experience, Provident fund settlement form. Planning to use these for proof.
As for the number of hours worked, I am asking an ex-colleague to sign a letter that confirms my name, duration with the company, designation, and the number of hours worked per week. If he agrees, I will be submitting this signed letter on white paper along with his ID card.
I'd love to hear what you think of this. Also, any idea what could I say in my LOE as the reason for not submitting these initially with the application? I think the documents you mentioned should be good enough. I did the same. Hopefully it works out for both of us. And for the LOE I just explained what additional documents I submitted. I didn't give a clarification as to why this was not submitted earlier. You could just say that the reference letter submitted during AOR is missing few information like salary and hours/week as the company format doesn't allow submitting these info. I think this should do. Atleast this is what I did. It's been a month since I submitted these documents and nobody has opened my file yet. I am still waiting for it's outcome. Let me know how it goes. Fingers crossed.

Thank you @cansha . I am trying to give my best shot at providing additional documents and an explanation, and I get your point. Keeping it brief makes a lot of sense to me now.
I also have a RR on my POF shown:

SETTLEMENT FUNDS: Appears To Meet Approx. CAD $19244 as per BANK OF INDIA statement
at 2020-01-10; Family of 1 requires CAD $12164 NOTE: PART OF THIS PROOF OF FUNDS IS A DEED OF GIFT
FROM PA’S BROTHER (6900,20) AND ANOTHER DEED OF GIFT FROM PA’S MOTHER (1815,84). ALL
DOCUMENT ON FILE

I had submitted a Bank Summary Statement listing my 3 accounts, the average balance for the last 6 months, the total amount in Indian currency, and that it can be liquidated for my personal use at my convenience (stamped and signed).
In addition, my bank account statement showing transactions, notarized gift deeds from mother and sibling who transferred an amount, their bank account statement showing transfers to my account.
The notarized affidavit of gift states that they have gifted the said amount to me (along with Bank and transaction details). That the gift is out of love and affection for me and they expect nothing in return. That the gift is irrevocable and they have no claim on the given amount and that I'm free to utilize it in any manner.

Do you think I should add something to these, now that is under RR? I was thinking of an updated Bank Summary statement with the current date to show that the amount is still in the bank for my use. And maybe a brief on the POF initially submitted (I had just attached docs sequentially in a single file)? I may be overthinking on this too, but please correct me if I am wrong @cansha .

Last question: I am trying to get a reference letter from any ex-colleagues to confirm the number of hours worked. I don't think there is a need for submitting anything just yet. The analyst has just noted that there is a gift deed and wants the officer to have another look at gift deed documents. But if submitting updated documents makes you feel better then do it.

No need. If the letter stated "Full time employment" then it should be good enough. And that was noted by the agent as well. The issue was that you didn't have salary information on the letter and you should have provided pay stubs in that case. Pay stubs are not needed if salary is mentioned on the letter.

Just upload paystubs. I don't see how the letter from colleagues would add any value when the letter from HR already stated "Full time employment" and the agent had no issues.

@Prageecha , what you've said sounds good. I'm still collecting documents to really give my best shot at the pending review and am not sure how much time do I have. Getting a letter is proving to be difficult now but still trying. I too hope things go well with both our applications. I will get back when I get any updates. Good luck!

No need. If the letter stated "Full time employment" then it should be good enough. And that was noted by the agent as well. I received it in my account.
I initially received an email about an update in my application, signed in then saw the letter sitting pretty in my account. No previous Canadian visa and I did not write any letter.

My AOR is Aug 29, 2019 so it has been a long wait for me (one dependent, RR cleared in late March, no SS, was living in the states but had moved back to home country).
