for those international students that aren't allowed to work, will they get caught if they get babysitting/nanny jobs? I know it's illegal but is there any way for the government to catch you working at all if you don't need to provide ur SIN number and legal name to your employer?

There's always some chance you'll be caught. For example, sometimes a person who knows someone else is working illegally will report that person to CBSA / IRCC.

Not the greatest idea to be asking how to avoid getting caught for working illegally...
 
Based on your savings and lack of reported income it becomes pretty easy to determine who is likely working for cash,
