I think it would be totally fine to start another job. You already have one-year Canadian work experience NOC B to be qualified under CEC, it does not matter what job you do in the future.
In my opinion, you will be alright and you don't need to have a LOE. As long as the proof of work experience that you claimed (letter for your company) clearly indicated that you worked 40 hours a week.
I have also received ITA on May 1 under CEC. I have only been to two countries so far in my life - India (where I was born) and Canada (where I studied and work right now). I am single/never married. I have a confusion about a question in “Travel History” section.
It says:
Provide details of any trips you have taken outside his/her country of origin or of residence in the last ten years (or since his/her 18th birthday if this was less than ten years ago). Include all trips: tourism, business, training, etc.

And one more question. Like I have some weeks in which I have worked less than 30hours mostly sick leaves. Will that be compensated by working a month on top of nov2019. Can i calculate those weeks in which I worked less than 30 hours?
you can count those weeks, however, you need to have some more weeks on top of Nov 2019 to compensate for whatever missing hours to make it 30 hours/week.
Ok I calculated it missing hours comes to be around 61 hours and I worked 2 months over it. So that should compensate it.

I got ITA on May 1st 2020. In the express entry profile I did not mention my undergraduate degree. If I mention that in my PR application will it be an issue?
Also do I need to upload transcript that have been recently taken from University or an previous one will do ?

If it has some tax slips or paystubs then yes mention it. You just have to tell them month not date in personal history.
It would be no problem to mention it now under the personal history section.

I got an invitation and worried about the NOC code that I have chosen. I have created a profile with NOC code 2173 for the DevOps Engineer Position
I got an employment letter from an employer.
please, anyone, help me by looking at job duties whether I have chosen the right NOC code or not.
1. Worked collaboratively with other DevOps and Software Engineers to deploy and operate our systems using Ansible, Powershell, and Bash scripts
2. Built and maintained tools to monitor running processes
3. Interacted with TeamCity to have application builds automated
4. Troubleshoot and resolved issues in dev and test environments
5. Focusses on Infrastructure automation, testing, and deployment DevOps engineering, ensure the availability, reliability, and performance of the systems
6.Documented processes and procedures for effective collaboration and communication.
