My program starts from 2020/1/6 and ends on 2021/12/31.

My acceptance letter says co-op will start from 2021/1/1 to 2021/5/1.

So, I don't need to have a co-op visa for 2020.

However, my co-op visa starts from 2020, and I'm not sure why.

On the top of that, my passport will expire on 2020/12/31, and CIC doesn't give you days for visa beyond your passport expiry date as you know.

So, my study visa and co-op visa starts from 2019/12/09(got my visa today) until 2020/12/31.

I understand my study visa status is all legit and good now.

But, My co-op visa starts from 2020/12/09 and ends on 2020/12/31 and I won't even be doing co-op work during this time.

Is it normal for co-op visa's starting & ending date to align with your study visa's starting & ending date?
 
Your dates are confusing. Did you actually get a coop work permit at the airport?
As long as your coop work permit is valid during the actual time you will be working its fine.
Apply for study permit extension before it expires if/when necessary, apply for coop work permit 6 months before you need it if/when necessary.

I got it from land via flagpoling.

I won't have to apply for a new study visa tho because I'm being sponsored PR under common law
