What did you put on the phone number for CPC-Sydney - Fedex requires a phone number?

I put their call center number, just as a placeholder. I don't see any reason why FedEx would try to call the number. Usually, they only call when unable to locate the recipient, which is extremely unlikely for mails going to a government building.

It actually says ON THE DAY before signing this application. So it means, that if you were eligible (today - Oct 11th) then you can sign the application today and not yesterday.

Could you suggest ... after printing the form can we write N/A for questions not applicable to us? Like last page on resident of quebec .... there is a question. Or should we choose NO answer there as we reside in ontario ?

I dated 11 October. I believe dating 12 October but mailing out today would cause a refusal. So if you want to date 12 October, you should mail it out tomorrow.

Good point, I never thought about that... Maybe via tracking number? Maybe use the date from residency calculator?

That question isn't really important. Simply don't misrepresent the date on the document. It's not worth the risk.

Instead of asking "How will the CRA even find out how much money I made last year?" you should simply be truthful in your tax return.
