Once we receive approval of my husband's PR, is there any deadline to move that we know of (other than a year from when his physical was done?). I am wondering because I am pregnant and moving 9 months pregnant or with a brand-newborn might prove challenging

As you noted, you must do the official PR landing in Canada by the expiry date on your COPR which is around 1 year from date of medical exam.

However once you land in Canada and become a PR, you can then go back to home country immediately after. Just don't mention this to CBSA when doing the landing as they can be picky with new PRs not actually intending to move here permanently.
If spouse is a Canadian citizen a PR can remain outside Canada forever and still maintain the Residency Obligation.
If spouse is not a citizen then a PR can remain outside Canada for up to 3 years before they would be in violation of the RO.
