I don't think they would do that. Were you able to justify? Im stressed now. But I did lot of TAing in my previous role.
 
It depends on visa officer because other post doc they got the pr with same job offer letter . However, mine rejected.

Coming from an academic background, although “postdoctoral fellow” is listed under the included roles for the claimed NOC (42100), the duties described in this NOC align more closely with those of a "teaching professor" or "lecture". Especially if your role involved limited student supervision and was primarily focused on lab work.

In that case, NOC 41201 - Post-secondary teaching and research assistants - seems to be a more relevant classification based on the duties you performed.
 
My 2 cents.

It isn't really relevant what NOC was mentioned in your employment letter.

It's your responsibility to indicate a correct NOC that is aligned with its lead statement and duties.
