VSF offices - holidays / offices closed

Hi. Any idea if VSF offices in foreign countries would be closed on Canadian national holidays? Like the embassies in foreign counties? Or would staff at VSF have same holidays as the countries they are in?

I hace to travel to one tomorrow and presume it'd be open, despite being a national holiday in Canada (office is in central America)
