My husband's application is In Progress. He is American and I am Canadian with a green card. We want to visit Canada for our vacation from work, just for a week.

Has anyone ever had a problem at the border in this situation? We can verify that we are only staying the week and not trying to get into the country early, before approval. I had thought to bring at least the sponsor approval letter in case anything comes up if they run our names at the border.

Please forgive me if this is a silly question. I have a tendency to overthink things sometimes. :-[

It should be fine. Many forum members from the USA have visited while their application was being processed, without problems.
Your husband should bring proof of ties to the USA, such as a lease or house deed, proof of his (and your job), etc. Having proof the application is already in process is also good, as is showing that your planned vacation is for only a short time. He will probably not be asked for any of this, by the way, but it is best to be prepared.

Thank you! That's is what I was thinking. Good to have it verified!
