My PR expired and I left Canada as a minor by my parents. Let's say for example I applied for a travel document and got accepted in a university, how much time would it take to renew my PR if I was studying in a university in Canada.

2 Years. You should note that if you are over 19 that as of 01/Aug/14 you will be considered an Adult by CIC.

If OP enters Canada with a travel document, he should be able to immediately apply for a PR card renewal. Is that incorrect?
