Does anyone know more information about this?

My common-law and I are separating and she is renouncing her status.

After that, her work wants to sponsor her, get her a work permit and continue working for them. She's a restaurant supervisor and they want to keep her.

"Workers nominated by a province or territory for permanent residence
* The worker must have a job offer from an employer based in that province/territory."

Can be exempt from LMIA?

She would need to research the PNP program in the province where she lives to see if she qualifies. She would need to actually give up her PR status before beginning the PNP process, as a PR cannot be nominated. It generally takes several months for provincial nomination apps to be processed and she would only be able to apply for a work permit after that is complete. She would not be able to work during that time in between.
