From my point of view the only reason behind this could be the work load on the visa office because they have mentioned on their website too that the indicated time is the time in which CIC has processed the 80% files in the past.
OK. Lets wait and watch i have also seen in some cases CIC has extended the validity of Medicals and @alex the king has also confirmed one of his known person's Medicals was going to expire in Jan'2018 but the CIC has given time to him till May'2018. so, i hope NDVO do this with all of us whose Medicals are going to expire in Dec'2017 and Jan'2018.

Same Here...Going through Great Tension since last month, but there is nothing which could be done by your end.
@sunnymks I think you are not alone dude as the list of people who MR in dec 2016 or Jan 2017 is increasing day by day so you should not worry and I think NDVO will process everybody file before Jan 2017 before your medical expires
