Work Expierience

Hi Everyone I have just came across this forum, plenty of information here.
I have few questions; Me and my wife have applied for skilled worker visa however we have one concern when it comes to work experience.
How would be work experience considered when it comes to part time work at the university, the full time lecturer got no more then 12 hours of lecturing per week for about 6.5 month in a year, of course you spent some time for research and publications conferences etc. but it's not showing on your contract, it is just part of your job.
Any thoughts on that

How long does it take (on average) to process the application in London once you've submitted all the supporting documents (not the medical).

I also have a brother living in Canada, do I need to provide birth certificate or copy of the passport and bills will be sufficient.
