I have a great uncle ie my Grandfathers brother who has Canadian citizenship. Would he be able to sponsor me?

He has never had a spouse, no children, no parents. Although he does have 3 siblings who live in Ireland (this includes my Grandfather). They are all in their 70's.

Unfortunately, your Grand Uncle cannot sponsor you, since he has living siblings (even though they are not in Canada):

Option 2 – Other relative

You may sponsor one relative, related by blood or adoption, of any age if you meet all of the following conditions:

* you do not have a spouse, common-law partner, or conjugal partner, or one of the following living relatives you could sponsor instead:

o brother or sister,
o uncle, aunt,
o nephew or niece.
