I am going to be working with an open work permit as a live-out nanny. I am aware that after two years, a live-in caregiver is able to apply for their permanent residency and a live-out must return home for a period of time after four years. When is a live-out able to apply for PR and are they able to at all?

unfortunately your not qualified for PR as live out nanny but based on your old post you have canadian bf. Maybe after 1 year of continues living in together with your bf. He can sponsor you as common law

Are there any jobs that allow you to apply for PR besides live in caregivers? Cause common law I think would be sort of a pain

Skilled foreign workers can apply under CEC. You can also look into PNP.

PNP = provincial nominee program
