I'm an April 2015 applicant for inland family sponsorship (my partner is Canadian). I've recently changed employers, and it appears that I should use the "Case Specific Enquiry" form to update CIC about this. What information do I need to supply? Start/end dates for my last/new employer? Proof of employment? I'm struggling to get through on the phone.

You don't need to update CIC for employment change, so don't worry about it.
