Hello,
we applied for my mother-in-law to visit us in Canada to see her first grandchild.
she got the visa stamped after more than 5 months processing time. During that time my wife went to see her mother back home because we were tired of waiting for the visa.

The visa is approved and stamped on the passport, however it is only valid between August 2025 and expires February 2026 which makes this visa useless to us now that my wife is already back home with her mother.

is it possible to change that visa to be a multi-entry, or at least request they change the expiry dates to a later date in 2026 so that we try to make use of it? or is it final since it was stamped on passport?

No. She enters during that time or applies again. IRCC is no longer giving out to everyone multi year visas.
