What's the reasoning for 1K/wk. I feel this is on higher side, since I have experienced it for around 10 days. I was with my family in a hotel, even with food and local travel it was not 1K/wk. Just wondering, if I'm missing any other point.

well yes you’re right, 1k/week is a very generous allowance, and it’s not a hard requirement at all—it’s just a rule of thumb that some of us like to mention to improve approval chances. Just so the visa officer will have zero doubts that the applicant can afford the trip.

I do have a commercial building which is under construction I don’t have the papers yet but it will be under my name can I use pictures as proof?

Think about it for a moment. Without official papers, for all they know, you took a picture of some random building and made up a story. So no.
