Can I visit my girlfriend in Canada while my working holiday visa is being processed? How can I prove to officers that I'm only visiting and I will be travelling back to my country? Does someone have an experience with this?

Do you already have an approved TRV or eTA?

To prove that your visit is only temporary, a return ticket is usually good enough.

Also, this should not be under family class sponsorship.

Then no issues with you visiting. Just make sure you are traveling on a return ticket and the length of your trip is reasonable. If you are asked, also make sure you can show you have the funds to pay for your visit.
