Hello there,

If one applies for a FSW as a cook for example, how will authorities check for that authenticity. Will they call up my employer (restuarant), require documents to verify that I have worked as a cook, require tax documents etc? Thanks in advance.

Certificate/s of Employment for one; Tax Returns/Documents (right); Certificate of Completion/Training from School/University. I don't know if ever the Visa Officers actually do call employers/authorities. The burden of proof is on you because if they doubt the veracity/authenticity of your documents then they can just turn down your application.
 
Most probably they will call. Why won't they?

As one of the proofs you can provide letter from the patrons of your restaurant.
