I currently have two doses of the sinovac vaccine which isn't accepted by canada, would I be able to go in if I get a third dose from pfizer?

You will not be considered as fully vaccinated since Sinovac is not accepted by Canada. You would need two Pfizer doses to be classified as vaccinated by Canada.

Subject to quarantine and other entry measures for those not vaccinated (e.g. testing).

The issue is that the sibling will be able to enter Canada and will be forced to quarantine for 14 days. You are coming with a spouse and children. Spouses and children were not part of the travel exemption. For the children if they have grandparents who are PRs or citizens they would meet travel exemptions as well. Your spouse is traveling as a tourist and so needs to be vaccinated with one of the 4 accepted vaccines in Canada to travel to Canada.

I’m going to Canada in February with my husband (I’m on a student permit and he’s on a open work visa).
I got two shots of sinovac and he got two shots of pfizer.
Is he required to quarantine with me? (We are going to travel together)

If you want to live together then yes you’ll both need to quarantine. If you can quarantine from each other he is fine.
