No. You have to stop working as soon as your PGWP expires.

Do you have a spouse or common law partner who is Canadian? Do you have a spouse or common law partner who is in Canada on a study permit or work permit in a NOC A, B or 0 job? Have you obtained a PNP nomination?
 
My partner is Canadian and we live together but it hasn't been a year yet for the common law.

When will you reach a year of living together continuously? Will this be before your PGWP expires?
 
That would be February 2021 and my wp expires tomorrow. I am submitting an application to extend my stay as a visitor in the meantime. Do you think this is ok?

Yes, you need to submit the application today to change your status to visitor.

Unfortunately I don't see any options for you to apply for an open work permit.

You'll need to stop working once your PGWP expires tomorrow.
