Looking for Best suggestion and any relative case story!

We got an ITA this Jan, we made a mistake during initial express entry profile update.
From the last 10 yrs me and my spouse have Indian and Canadian work experience
I have 1.5 yrs experience in India under Noc category , and one year Canadian experience with approved LMIA.
My spouse have 2 yrs experience, but in 3 different companies with less than an year experience in each with different designations.( which is not eligible work experience for express entry)
So when we created our express entry profile we gave all the work experience information of me and my spouse had from last 10yrs. I calmed one year Canadian and one year India under Noc for mine and for my spouse we mentioned all the work experiences in India and Canada which is not eligible (neither Noc nor One complete year).
My intention was to claim only for my experiences not my spouse.
Now they are asking for all the work experience documentation of my spouses too, for which we didn't get any points. We don't have all the documents they are asking for.
I stuck with no clue , how should I proceed further.

Can I create a new express entry profile, with out entring my spouse work history at all.
Now , I'm thing not to claim points for my Indian experience coz I don't have pay stubs, it was a cash job under 90K per annum not taxable.

Can a now not declare my Indian experience under Noc and only Claim for Canadian experience.
As the pool dropped to 440 I have 475 points with out Indian experience.

While there be any problem of miss repsentaion or any issues if I proceed with a new express entry profile.
