I couldn't find a category for engineers and I am sure that I am not the first one asking this question. Any response would be appreciated! I have also emailed the Buffalo Consulate and will provide an update when I hear from them.

1. As there are no engineering occupations on the eligible list http://www.cic.gc.ca/english/immigrate/skilled/apply-who-instructions.asp#list You are not eligible to apply for FSW
2. To apply for FSW2 you would require an Approved Employment Opinion from an Employer in Canada who is willing to hire you once you have your PR. The employer has to apply to Service Canada and the processing takes 6 months for approval/refusal.
3. There is the Canadian Experience Class. To qualify you would have to have an employer in Canada who has applied for a Labour Market Opinion from Service Canada, after advertising the position on the job bank, that there are no Canadians available/qualified for the position. You would then get a work permit and could apply after working 2 years in Canada.,
4. You can check the Provincial Nomination Programs to see if there are any engineering occupations there: http://www.cic.gc.ca/english/immigrate/provincial/apply-who.asp

Except the Mechanical Engineer wouldn't meet the following requirements for the NOC

Employment requirements

Completion of secondary school is usually required.

Several years of experience as a qualified tradesperson in a relevant trade are usually required.

Journeyman/woman trade certification in a relevant trade is required.
 
Mechanical Engineer and Mechanical Maintenance Supervisor are two different things. As far as I can tell.
OP you can go through the Main Duties and see if they match yours. Though I doubt it, as you are qualified as an Engineer.
