I'm worried about my wifes next trip to Canada, and would like some advice on how to declare
the purpose of her visit, and about documents/requirements:
ie is a return ticket necessary?

1. I am Cdn citizen, she is Chinese
2. We have recently married in Canada
3. I have paid the fees for the OUTCAN PR application that I am preparing (but haven't filed yet)
4. She has a multi-entry TRV. We applied for and received a one year extension to her TRV stay while the PR is processing
5. We now will travel outside of Canada for our honeymoon, but will return on different flights

Is this situation likely to cause trouble? Should I delay her re-entry until the PR application is actually filed?

I can't say for sure what is gonna happen since the extension does not allow re-entry and she will have to go through a border officer again.
The right thing to do would be to tell the truth (she's gonna stay with you) but don't mention she'd be staying in Canada until her application is done (she's likely to be denied if they think she'd overstay)
the only problem is that there's no 100% guarantee that she's gonna allowed back in Canada =/.
Make sure she's got some money on her too =D
I'm kinda in the same situation (got an extension), but we decided that I should stay abroad for a while until PR comes out. I believe my processing time is less than China though (8 months for Brazil)

By the way..
I watched that border security program and they gave a Chinese girl a six month visit "visa" as she had a Canadian spouse.
So, maybe people just make a big deal of it..
I can't remember if she had a return ticket.. but I'm pretty sure she didn't have a return ticket.
PS: She could extend her visitor visa after the 6 months. =D

To clarify, she didn't extend her TRV; a TRV is an entry visa that doesn't give status in Canada and cannot be extended. Status is given by the CBSA officer upon entry. She extended her visitor status. This status ends when she leaves Canada; when she re-enters, she will be re-assessed as a new visitor.

She should have a ticket out of Canada; the usual thing people do is to buy a fully refundable one-way ticket and then cancel once in Canada. She can tell the officer that she is visiting her husband while her PR app processes. She should carry the PR fee receipt and proof of funds. There is no point in delaying her re-entry until the PR app is submitted, as it will not make a difference.
