Upon delivery of my work permit, I have been told that it is okay to do jobs that neither fall into 0, A nor B categories, but let’s think about the extreme (surge of discrimination for whatever reasons, economic downturn, etc…), let’s say I cannot find any jobs falling into the required categories, is there a chance that my Permanent residency be compromised (as to apply for PR, you need to have a job which falls under A? B or 0, isn’t it)?

Your question isn't very clear. It looks like you are coming to Canada on a study permit and will then qualify for a post graduate work permit. If that's the case, once you finish school, you want to obtain an job that is NOC A, B or 0 if you want the greatest chance of obtaining PR. If you obtain a job that's not under one of these skill levels, it may not be possible to apply.
 
Agree, not clear at all.

On the other hand, if the OP has already applied for PR under the CEC class, and has now obtained an open work permit - CEC is only based on prior work history. So you can accept a lower skilled job, it will have no impact on an application "in process."

But if you are still trying to qualify for CEC class, you will need a skilled position.
