5 years ago I opened a multiple visa for my mother. It expires in 5 months. If she comes now will she be able to stay six months in Canada? Which means she will stay one extra month after her visa expires but for total of 6 month. Or I need to apply for a new visa?

Typically the expiry date of the visa is until when the visa is valid, not the length of stay. As this is a multiple-entry visa - she can still use it (provided her passport does not expire within 6 months) and she enters before the expiry of the visa.

Length of stay is determined either by the date stamped on the passport when you enter the country. You are permitted to stay up to the date stamped; if there is no stamp - usually allowed 6mos. I suggest if there is no stamp - confirm immediately with the CBSA/immigration officer before leaving the counter.

Don't cut the entry date too thin/too close on the expiry date for her to use the visa. Final admission is still determined by the immigration authorities on any port of entry - so better not have any possible reason on your travel documentation that may lead to refusal of entry into the country.
