Honestly, it is not complicated to scan documents, save them as PDFs and upload them. Everything you need to know is in IRCC's website.

Well, since I still have an ITA, I feel like I got one shot at this and if I were to mess something up, they will refuse my application and I will not have a second shot at this.You don't upload documents when you submit your EE profile. You only upload documents after your profile has been selected out of the pool and you receive ITA. No - they do not open your file in the next few days after you submit. It takes several weeks for processing to start.
Honestly, if you're really feeling that uncomfortable about all of this, just hire a lawyer.

If you are single without dependents, have proper documents for everything you claimed points for, and have had no refusals in the past, it is considered a simple application.
