Though the Visa Office checklist states that the spouse's reference letters need to be originals, is it OK to submit notarized copies? I am asking this as my wife would need the original letters in case of a job change and given the time line that Visa offices take, it might become a problem in the future. Since she is not the principal applicant, is this OK to do?
 
If she is not the principal applicant, you dont get any points for her job. Just mention her particulars in the forms and no need to send employment documents. You need to send her education documents ( notarized) for availing points.
