I was born and raised in Canada for more than 20 years. Recently I've lived out-of-country for around 4 years, where I married my wife. I am going through outland sponsorship, so we can move back to Canada to have a new home.

Sometimes, We have very advantageous seasonal employment back in her home-country. Does this effect the process if we intend to be traveling back and forth?

I intend to land in Canada with my wife, because we want to live in Canada, but then will I (the Canadian) may be pulled away back out of country some times. We want our "home-base" in Canada and be Canadian citizens.

But also we want the freedom to travel for seasonal work when it is profitable. We all know the Canadian winters are harsh, and thats usually when profitable seasonal tourism work is booming abroad.

Also, I heard, that when my sponsored wife is traveling with me, this still counts towards her days within Canada? If we have a seasonal job for 3 months outside of Canada, does these 3 months still count to her days for applying for citizenship if she is with me out-of-country?
 
Yes - you can still apply. Since you are currently living outside of Canada, as part of the application package, you will need to provide evidence that you plan to relocate to Canada to live here once the PR visa is approved.

The days she spends outside of Canada with you will only count towards maintaining her PR status - not towards citizenship.

Ok, so are there any other differences in the "days counted in Canada" for PR status VS. citizenship application?

Yes, different rules, different calculations.

If she complies with the Residency Obligation requirements, it will not affect her PR status.
