Hi guys, I want to confirm on whether or not my spouse would have maintained status when her status in Canada from IEC expires.

From reading threads around, there are some mixed answers but from what I've read so far it seems that as long as the application package is mailed in and received at the CPC before her work permit is expired, then my spouse would have maintained status?

From the IRCC website, it says that:

The date and time of receipt are important for determining if status is maintained under subsection R183(5)...

The date received for paper applications is the date physically received and stamped at the Case Processing Centre. However, if the date physically received is after the expiry date of the applicant’s status, the officer will backdate the received date by 7 days to account for any mail delivery delays.

Is what I'm understanding from this correct? I mailed it in by Xpresspost and we got the signature from tracking that it was received at the CPC. Would that put my spouse on maintained status? Or do we have to receive AOR in order for maintained status to come into effect? Are receipts of applications, mailing, signature enough to prove maintained status?

Hoping someone who has been through this can clarify. I've been calling IRCC and kept getting the "Please try calling again" message due to high volume of calls.

Yes, your spouse would have implied status from the time the application is received. No, it's not from AOR. It's from the time the application is received by IRCC.
