I was wondering if I needed to get a new passport with my new last name (now that I'm married) for the application. It's still good for another 3 years and honestly I don't want to have to pay another 160 for a new one if this one is still useable. I was thinking that because clearly I'm married if I have proof with my marriage certificate included with the app that they wouldnt make a big fuss about it. My old last name is on my birth certificate so I'm not sure if it counts for anything.

My other question is concerning the proof of income. Would paystubs and a letter from my manager be good enough?

Lastly, the part where I need to describe the times when friends or family have met him...how detailed should I go?

I did not change my passport, and the Option C printout is requested for proof of income.

How detailed you go into the times your spouse met your family and friends is up to you.
We wrote a letter describing our relationship and how it progressed, friends we visited,
meeting my family but I did not go into the huge depth on meeting my aunts and uncles
when we ran into them while visiting other family members. I listed them as people my spouse has
met and put the dates as best as I could remember.....If they ask for more detailed information
I will provide it.
 
I don't think there is any issue keeping your passport. Did you change your name on other identification? And what's the name you are using to apply? If everything else has been changed to your married name, and just the passport is outstanding I think you can include your maiden name in "other names that you've used in the past" in the general application form.

In terms of income, you do not need to meet any requirements when sponsoring just a spouse but yes you'd need to provide a letter from your employer and Option C print out. Order the Option C by calling CRA. Its simple but may take about 3 weeks to arrive. For pay stubs, the guide and application outline exactly when pay stubs are necessary, but I think for spousal they are optional (I only included the most recent ones).
