can my uncle who is a Canadian citizen sponsor me and my husband from Hong kong? and he is not sponsoring any one right now he has 1 adult son. i appreciate your help

No. He must have no other living family members he can sponsor in order to qualify.

No. He cannot. Assuming his son is a Canadian citizen as well.
(And he likely have a spouse? Does he has living parents? As long as he has any other living relative, he can't sponsor a niece.)
This route is also called "lonely Canadian"
