SINP and free-lancer/entrepreneur proof of experience

Hi everyone

I'm an engineer and since 2016 I'm working as a freelancer, and since 2020 I opened my own company in Brazil to keep working with some bigger customers.
I will apply through SINP (Saskatchewan) as Skilled Worked, but my doubt is how can I prove my experience.

I have some contracts signed by my customers, but the summation of hours doesn't achieve the 1560 hours needed. As a freelancer/entrepreneur I spent some time on administrative work, and my own projects (like products such as my website and some internal schematics that I use in projects, digital marketing and my YouTube channel).

I don't have any idea how can I prove my entire experience for SINP. Do I need to prove all the 1560 hours or they will check a sampling? How could I attach my time spent producing engineering videos for YouTube as I don't have contracts for this? I have a youtube channel since 2016 with hundreds of electronic and programming videos (this is a part of my digital marketing - many customers come to me through my videos).

What is your NOC? What is your ECA? Estimated SINP score? Are you applying through Express Entry. If through Express Entry read through the mandatory document requirements to prove self employment. SINP list self employment requirements too (business registration, paying taxes, client receipts and contracts.). You need to prove all your hours.
