Should I mention my new job that I started a week ago?

So, I recently started working at a company. Now, my work experience meets the required criteria without my new job. If I have to include my new job then I'll have to get a reference letter (or not?) which might be a bit of a problem as my employer at the moment is not prepared to hear news about my leaving. Is it OK to not mention it in the application?
