We are in a state of total panic but we did it.

The only thing we KNOW for sure is my FBI background is 2 months out of date. ><" So should I go ahead and get it done again and wait for my UCI number to send that in or wait for them to request it or...

Im honestly hoping they will not notice it is 2 months out of date!?!?!?

if the police record sent is more than 90 days old, then yes, start processing a new one. that way, by the time they request a new one, you should have the new record available to send. it's currently taking 12+ weeks for FBI to process requests.

the sponsor eligibility letter will have instructions, and you can send it accordingly. you don't want the fbi sending it directly to CIC, it will most certainly get lost.
