now what i want to know is that as per above information i have to send total 720 euros. for myself and spouse or do i have to remit $490CAD equivalent Euros as per current exchange rate.

Send it in Euros as mentioned, 2x360 Euro = 720 ;D

You have option of sending DD in CA$ 490 each X 2 in name of "Receiver General for Canada"

yes i do, but bank transfer is a cheaper option.
