I wonder if any of you guys quit their job while waiting for PR?

I'm CEC track so it wont affect my points but I'm wondering if telling the CIC about it would delay my application more? or should I not tell them about it.

Wonder what other people did in my situation? appreciate any help guys. Thanks

Unless you're claiming 50 points for an offer of "arranged employment" and you end up losing said offer, there's no need to inform IRCC of any change in employment.
 
I have handed in my resignation, but as I'm a doctor I had to give minimum of 3 months notice. I finish before Christmas, and have $20k plus of savings, so even if I don't get a job straight away I can still move over to Canada early next year (if my PPR is on time) or can stay at home for a few months with parents (though they won't enjoy it - the perks of being in your twenties! :p)

No problems in your case whatsoever. You don't need to inform CIC.
