Question on a Closed Business

I have been working in a particular restaurant in Toronto for about 2000 hours. As I am trying to do my express entry, I found that the business had been already closed down before even I was able to request a copy of employment letter. Luckily, I do own a official paper that states when I started my work and when I finished including my total hours and income and taxes. I know the letter is mandatory, but even if I try to contact the old boss about this matter, no reply comes from him. Does anyone know about the solution of this matter? Please inform me.

Get a notarised reference from someone you worked with and then attach documents to show the business was dissolved.
