My significant other from Thailand is looking at applying for a visitor visa. One of the documents required is Purpose of Travel.

Because the travel dates aren't set in stone yet, is there any way around that other than actually purchasing a roundtrip ticket with some set dates and uploading the itinerary?

Don't buy any tickets until a TRV is granted. S/he can include flight itineraries instead or tickets that are not paid for/can be held for 24 hours without payment

Are you suggesting that I pick some arbritary dates 8-12 months into the future, buy a fully refundable round trip flight ticket based on those dates, upload the ticket itinerary, and then cancel the ticket?

No, that's not the suggestion.

You can check sites like Expedia or request a travel agent to hold a booking for 24 hours without paying for the ticket. This tentative booking can be included in the application.

Flights must be for the dates your partner intends to arrive/return.

BTW if your partner intends to visit one year from now, then s/he is applying way too much in advance
