You must pick at least two of the supporting documents for cohabitation.
If we can submit two does that mean we CANNOT send letters of explanation/other evidence? Is it a one-or-the-other situation?

Provide as much as you can. I would include other things listed on the checklist. They will ask for more if they need it, there’s been a lot of people who were asked to submit extra documentation even after exceeding the requirements of the checklist.
