Funds, proof: Proof of funds

of your positions within NOC 1311 - Accounting Technicians and Bookkeepers.
So I received this letter 2 days ago requiring the above mentioned documents, the problem is that I don't have the work contracts for my two first jobs as apparently I wasn't declared as an employee in those companies (meaning that social contributions were not paid by the company, unfortunately this is a common practice in the country I am from)... How do I explain that...
And also I have once submitted the proof of funds (my bf has lent me the money) and now they require it again...
How do I explain my situation without damaging my integrity?
