My parents landed in Apr 2019 and travelled back after 5 months. COVID restrictions forced them to cancel travel twice, once in Apr 2020 and then in Apr 2021. They live in India and gov,t of Canada has stopped travel between the countries for a good 6 plus months forcing my parents to keep postponing their travel
Now they have 2 yrs to cover the remaining 19 months and travel isnt easy yet with several restrictions still in place

I wonder if there is a way to extend their PR status deadline of Apr 2024 by another year. Is this something possible?

I am afraid not. Travel is still difficult but possible.

Why did your parents not take indirect flights such as via Maldives, Dubai, Amsterdam, etc.?

It's not possible to extend by another year.

However it feels like you are worrying prematurely. They still have lots of time. Technically they don't have to return until August or September next year.
