The key document is your COPR. That is the most difficult to replace if you lose it. Also when you apply, you will also need all your passports (current and expired) since you landed. So if you renew your passport after landing, make sure you get your old expired passport back and keep it safe.

I also strongly suggest you create a spreadsheet now where you carefully document all your entries and exits to Canada. It will make life much easier when your apply down the road. Keep records of your travels (if you fly, keep all boarding passes).

Also NOA from Canada revenue, T4's and all leases or rental agreements. If you move make sure you update your address with the Bank, Health card and Driver license. Sometimes they don't stamp the passport at the border, make sure you get a stamp whenever you enter or exit a country.

what are t4's and noa's?
Your employer will send you a T4 form which details your employment income, withheld tax, various contributions, etc. You use it to file your taxes. I guess it is similar to a P60 in the UK. After you file your taxes, you will get something from CRA (Canada Revenue Agency) called a Notice of Assessment (NOA) which is your proof that you filed your taxes and a summary of your income for the year, taxes paid, etc.
