I've submitted my PR card Renewal but
if I don't receive it back in time, can I travel to Europe, and then to the US to enter via car instead?
 
But will the US require my PR card if my passport is from EU but my address information is from Canada?

You don't need a PR card. However you would need an ESTA to the best of my knowledge.

Yes, I've read about that. Just wondering if they'll question why my passport is EU when my residency is Canadian and I don't have a PR card available. Just trying to cover all my bases and be prepared.

Canadian PRs don't qualify for Canadian passports. So of course you'd need to travel on your EU passport. You won't qualify for a Canadian passport until you are a Canadian citizen. This isn't in any way unusual.

I know this, my question is about my options for getting back to Canada if my PR card isn't renewed in time. I can fly to the US and drive into Canada, but I just want to make sure I won't have any issues arriving in the US.

Your Canadian PR card has nothing (zero/zilch) to do with your admission into the US.

All you have to do is show your expired PR card and proof that your PR card is in the processed of being renewed. Payment records for the renewal, proof of the status of your renewal, etc. all are potential proofs.
