Can I continue to stay in Canada with an expired PR to complete required days to become 730? My health card and Ontario photo card will expire Dec 2018 yet. I haven't calculated yet the exact number of days lacking. Can I get access to information on how many days really have I been absent from Canada
 
As long as you don't need to travel outside of Canada, you are fine to remain. The PR card is the only thing expiring, not your status as a PR. You should be able to renew both your DL and Health Card without a PR card. If you travel outside of Canada, you will need to apply for a PRTD to return without a valid PR card, which may result in them reviewing your status. Best to avoid that and apply once you meet the RO.

1. Yes.
2, Check you passport for exit and entry stamps. Get a travel history report from CBSA http://www.cbsa-asfc.gc.ca/agency-agence/reports-rapports/pia-efvp/atip-aiprp/thr-rav-eng.html You can get your US entry records here: https://www.cbp.gov/site-policy-notices/foia/records
 
Further to my original query, I am a recent US green card holder. I could probably come back to Canada without using my PR card (if it's already expired) so as to continue building up the required 730 day stay and thus apply for its renewal. Although I am aware I should not stay away from US for more than 6 months, or I would lose validity of my green card.

Am I right in the above assumptions?

CBSA can determine your PR status when you attempt entry into Canada. If asked, you must answer honestly that you're a PR.

And the 6-month rule for US green card is not a firm rule. A US officer can start process to revoke your green card if they simply feel you are no longer residing in the US, even if you've been gone less than 6 months on a given trip. The US is much more strict than Canada in terms of their residency obligations.
