If I were to apply for Canadian Experience from the UK (I qualify for the requirements) and then visited Australia whilst my application was pending, would I be able to get the medicals done from Australia and send them to CIC, or would I have to do my medicals from the country I'm applying through?

You can do your medicals in Australia, as long as it's done by a Designated Medical Practitioner. The list of doctors can be found by searching CIC's website.
